Toasted Coconut Cookies

1: Preheat the oven to 190C.

2: In a large bowl, whisk together the sugar and butter until light and fluffy.

3: Add the milk and vanilla and mix well.

4: Using a wooden spoon, mix in the flour, baking powder, and baking soda.

5: Toast the coconut in a frying pan until golden.

6: Roughly chop the chocolate into big chunks and fold these in too.

7: Pop the mixture in the fridge for 15 minutes to firm up.

8: Scoop a tablespoon of dough out and roll it into a ball, placing it on a parchment paper-lined baking tray.

9: Keep the cookies at least 5cm apart on the tray.

10: Bake in the oven for 10-12 minutes until golden around the edges.

11: Leave to cool for 10 minutes to firm up a little.
