A delicious and easy miso mushroom udon carbonara, perfect for a quick meal after a long day. This dish features flavorful ingredients like mushrooms, udon noodles, and a creamy egg mixture with Parmesan.
Dry fry your sliced mushrooms until caramelised for about 5-7 minutes.
Meanwhile, crack the egg and egg yolk into a bowl and mix with miso paste and Parmesan, then slowly add a little noodle cooking water while stirring continuously.
Add a tablespoon of olive oil to the mushrooms and the diced shallot, and fry for a couple of minutes.
Add the garlic and cook for another minute.
Remove from the heat and pour in the drained udon noodles.
Slowly pour in the egg mixture while continuing to stir the noodles to prevent scrambling.
Once all the egg mix is in, you should have a thick, silky sauce.
Serve and top with more Parmesan and black pepper.
