A delicious Italian dish known as engagement beans, made with white beans, roasted butternut squash, and crispy sage. The beans are simmered with garlic in sage-infused olive oil and topped with roasted squash for a hearty meal.
 Preheat the oven to 200C.
Chop the butternut squash, leaving the skin on if desired. Drizzle with olive oil and roast in the oven for 40 minutes until caramelizing around the edges.
Remove the sage leaves from one of the sprigs and gently fry in olive oil until crisp, then set on a paper towel.
Mince the garlic and add to the sage-infused oil, frying for a minute.
Add the white beans with all their juices, a splash of water, and season with salt and pepper.
Throw in two sprigs of sage and simmer until thick.
Once thickened, remove the sage leaves and top with the roasted squash, adding additional olive oil, salt, and pepper.
