These crispy rice bites are easy to make and customizable with various toppings. The recipe includes a chickpea tuna mix and a ponzu marinated grapefruit segment for a burst of flavor. Perfect for a fun snack or appetizer.
Line a 9x9 baking tray with parchment and flatten the cooked rice into it.
Put the tray in the freezer while preparing the toppings.
In a bowl, mash the chickpeas and then add siracha, mayo, salt, and crushed nori sheets. Mix well and set aside.
Cut the grapefruit into segments and place them in a bowl with the ponzu.
Once the rice has firmed up, remove it from the freezer and cut it into small rectangles.
Heat about a centimeter of vegetable oil in a pan over high heat.
Fry the rice rectangles on each side for about 5 minutes or until golden.
Remove the fried rice and set them on a paper towel to soak up any excess oil.
For the chickpea tuna bites, lay a slice of avocado on the rice, sprinkle with salt, and add the chickpea mix. Drizzle with siracha and sprinkle with furikake.
For the grapefruit bites, squeeze some siracha mayo on the crispy rice, top with grapefruit segments and sliced spring onion. Enjoy!
