A comforting dish made with Cavolo Nero and beans, perfect for cold winter evenings. This dairy-free recipe can easily be adjusted by substituting nutritional yeast for parmesan. Serve warm with a side of bread.
Remove the stalks from the Cavolo Nero and plunge them in boiling water for 2 minutes.
Remove from boiling water and plunge in ice water until completely cool.
Drain and blitz the Cavolo Nero in a food processor with nutritional yeast, stock cube, and water until smooth.
Meanwhile, fry the diced shallot in olive oil with salt for 3 minutes.
Add in the minced garlic and nutmeg and cook for another few minutes.
Pour in the white wine and let it bubble for a few minutes.
Stir through the beans and stock, bringing to a boil.
Let simmer for 5 minutes before stirring in the blitzed Cavolo Nero.
Let simmer for another 5 minutes and squeeze in the lemon juice.
Serve with parmesan on top and alongside a hunk of bread.
